Chocolate Chip Muffins

Super simple, cozy muffin!

I grew up eating these muffins, so they are a lifelong favourite of mine. The simplicity of these may give away how picky of an eater I was as a child haha. A very simple, slightly dense vanilla batter with chocolate chips and a cinnamon sugar sprinkle on top. This simple flavour combo really hits. The batter is very thick as you can see below, so don’t let that throw you off.

Ingredients:

Batter

  • 1/2 c butter, softened
  • 1 c sugar
  • 2 eggs
  • 1 c greek yogurt, or whipped cottage cheese
  • 1 tbsp vanilla
  • 1 1/2 c flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2/3 c chocolate chips

Topping

  • 1/4 c chocolate chips
  • 2 tbsp brown sugar
  • 1 tsp cinnamon

Directions:

  1. Preheat oven to 350
  2. In large bowl, mix butter and sugar until well combined.
  3. Add eggs, yogurt and vanilla and mix until smooth.
  4. Fold in flour, baking soda, baking powder, salt and chocolate chips
  5. Scoop evenly into 12 muffin liners
  6. Combine topping ingredients and sprinkle over muffins
  7. Bake for 25-30 minutes until puffy and browned and enjoy ☺️
