I am a cilantro hater, but even I don’t hate it in this!

This is such a fresh salsa, it works so well as a topping or as a standalone dip! I think cilantro tastes soapy, but I don’t notice the soapiness in here, so try adding a teensy bit to experiment if you share my cilantro hating genes.
White onions are the best in this, but if you don’t have those on hand, feel free to sub in your onion of choice!
Since there are so few ingredients, the quality of the ingredients can really affect the taste, so use the best tomatoes you’ve got!
When I make this I keep it in the fridge for a few days and use it as a topping on my bowls throughout the week!

Ingredients:
- 3 tomatoes, diced
- 1/2 large onion, diced
- 1 big handful cilantro
- 1 lime, juiced
- 1 tsp salt

Directions:
- Chop up your ingredients and add them all to a bowl, mix to combine and let sit at least 30 minutes to let all the flavours meld together.
- Enjoy on a bowl or with tortilla chips 😊
