My go-to low effort week night dinner!

| Time: | 30 minutes | Serving size: | 2 servings |
Ingredients:
- 2 potatoes
- 2 carrots
- 1 onion
- 4 cloves garlic
- 1 tbsp soy sauce
- 2 blocks golden curry
- 2 green onions

Directions:
- Chop potatoes, carrot, onion into bite sized pieces. Finely chop garlic and green onion.
- To a saucepan, add 2c water, potatoes, carrot, onion, garlic and soy sauce. Bring to a boil and let simmer 10 minutes.
- Break up curry blocks into small pieces and add to pot.
- Continue to cook over low heat until veggies are fully cooked through and curry has thickened.
- Once thick, stir in green onions and remove from heat.
- Serve alongside rice and protein of choice.

Tips:
- Make it meal prep: This recipe keeps in the fridge super well, so make a double recipe and then you have lunch for the week!
