Japanese Curry

My go-to low effort week night dinner!

Ingredients:

  • 2 potatoes
  • 2 carrots
  • 1 onion
  • 4 cloves garlic
  • 1 tbsp soy sauce
  • 2 blocks golden curry
  • 2 green onions

Directions:

  1. Chop potatoes, carrot, onion into bite sized pieces. Finely chop garlic and green onion.
  2. To a saucepan, add 2c water, potatoes, carrot, onion, garlic and soy sauce. Bring to a boil and let simmer 10 minutes.
  3. Break up curry blocks into small pieces and add to pot.
  4. Continue to cook over low heat until veggies are fully cooked through and curry has thickened.
  5. Once thick, stir in green onions and remove from heat.
  6. Serve alongside rice and protein of choice.
  7. Enjoy 😊
