Yummy mac n cheese with a protein boost from cottage cheese!

I promise this will satisfy your creamy pasta craving, don’t be scared off by the cottage cheese! Also, would recommend adding your own flair to the recipe, some bonus add-ons I love are: breadcrumbs toasted in a pan with butter, chili flakes, parmesan, parsley and nutritional yeast! Some favourite types of cheese I like to use for this are: parm, cheddar, mozz, the options are endless!

Ingredients:
- 1/2 lb pasta (my fav shape is cavatappi!)
- 1 tbsp butter
- 1 tbsp flour
- 1/2 c milk
- 2/3 c cottage cheese
- 1 tsp dijon mustard, or 1/2 tsp ground mustard (optional)
- 1/4 – 1/2 c grated cheese (depending on how cheesy you are)
- salt, pepper to taste

Directions:
- Bring water to a boil in a pot, once boiling add pasta and cook to al dente according to package instructions (roughly 8-10 mins). Strain when done.
- To a pan: add butter and flour and let cook for a few minutes over medium heat. Add milk 1/4c at a time, allowing it to thicken between additions. Reduce heat to low, add cottage cheese and mustard, mixing well to combine, cook until cottage cheese curds start to break down and melt.
- Remove pan from heat, add pasta, cheese, salt, pepper, mix until pasta is well coated and all cheese is melty and delicious.
