Protein Mac n Cheese

Yummy mac n cheese with a protein boost from cottage cheese!

I promise this will satisfy your creamy pasta craving, don’t be scared off by the cottage cheese! Also, would recommend adding your own flair to the recipe, some bonus add-ons I love are: breadcrumbs toasted in a pan with butter, chili flakes, parmesan, parsley and nutritional yeast! Some favourite types of cheese I like to use for this are: parm, cheddar, mozz, the options are endless!

Ingredients:

  • 1/2 lb pasta (my fav shape is cavatappi!)
  • 1 tbsp butter
  • 1 tbsp flour
  • 1/2 c milk
  • 2/3 c cottage cheese
  • 1 tsp dijon mustard, or 1/2 tsp ground mustard (optional)
  • 1/4 – 1/2 c grated cheese (depending on how cheesy you are)
  • salt, pepper to taste

Directions:

  1. Bring water to a boil in a pot, once boiling add pasta and cook to al dente according to package instructions (roughly 8-10 mins). Strain when done.
  2. To a pan: add butter and flour and let cook for a few minutes over medium heat. Add milk 1/4c at a time, allowing it to thicken between additions. Reduce heat to low, add cottage cheese and mustard, mixing well to combine, cook until cottage cheese curds start to break down and melt.
  3. Remove pan from heat, add pasta, cheese, salt, pepper, mix until pasta is well coated and all cheese is melty and delicious.
