Great as a dip or for topping your burrito bowl!

You can use whatever your corn of choice is for this recipe! I use frozen because it’s the easiest, but corn on the cob or even canned would also work so well!
I char my limes and jalapenos in the pan before adding them to help get that smoky, charred flavour that elote has, so I would recommend going the extra mile and doing that if you have the time!
For the cheese, you can use any crumbly cheese you have on hand, cotija is ideal if you can find it, but I’ve used feta when I have only that on hand!
Trader Joe’s ‘Everything but the Elote’ seasoning blend also can be subbed instead of the spices below and it’s extra delicious!

Ingredients:
- 2 jalapenos (or less if you don’t like spicy), diced
- 1 juicy lime, juiced
- 1/4 c cheese (cotija or feta), crumbled
- 1.5 c. corn
- 1 tbsp butter
- Salt to taste
- 3 cloves garlic, minced
- Spices:
- 1 tbsp chili powder
- 1 tsp paprika
- 1 tsp cumin

Directions:
- To a saucepan, heated over medium heat, add butter, corn, garlic, spices and salt. Cook for 5 minutes until fragrant. Turn heat up a bit and let cook until you see the corn start to get lightly charred. Remove from heat.
- Add corn to a bowl, along with jalapeno and lime. Once corn is cool, also stir in your cheese.
- Serve alongside tortilla chips or on your burrito bowl and enjoy 😊
