Black Bean Noodles

Such a hearty, satisfying meal!

Ingredients:

  • 1 zucchini, largely diced
  • 1 onion, largely diced
  • 1 c cabbage, chopped
  • 3 cloves garlic, minced
  • 2 portions noodles
  • 1/4c black bean paste
  • 1 tbsp sugar

Directions:

  1. Heat saucepan over medium heat. Add enough oil such that the pan is covered in a thin layer of oil. Fry 1/4c black bean paste for a few minutes, then remove from pan and set aside.
  2. Cook noodles according to package directions.
  3. Add zucchini, onion, cabbage and garlic to pan. Once soft, add 1/2 c water, fried black bean paste and sugar and let reduce.
  4. Serve veggies over noodles, alongside protein of choice and enjoy!
