Tomato and Eggs

Such an easy go-to meal!

Ingredients:

  • 4 eggs
  • 1 tomato, diced
  • 2 cloves garlic, minced
  • 1 tsp sugar
  • 1 tsp soy sauce
  • Salt to taste

Directions:

  1. Heat pan over medium heat. While waiting for it to heat, crack 4 eggs into a bowl and scramble. Add oil to pan and cook scrambled eggs until set.
  2. Add another drizzle of oil to pan, add garlic and let cook until golden. Add tomato, sugar, soy sauce and a sprinkle of salt.
  3. Let cook until mushy, then add eggs back in and stir to combine.
  4. Serve alongside rice and top with green onions and sesame seeds and enjoy 😊
