Great meal-prep and freezer friendly option!

Such a good option to have stored in the freezer for those days where you just don’t have the time or energy to cook!

Use whichever type of lasagna noodles you want, I use basic storebought dried because it easy and cheap but fresh is good too! Just make note of whether or not it needs to be boiled before going in the oven and adjust the recipe accordingly.

The assembly process is where it gets fun! I go in first with some sauce so the noodles don’t stick to the pan. Then I do the following 3 times: noodles, cottage cheese/ricotta, sauce, mozzarella. Then top with some parm if you have it on hand!




You should bake lasagna covered so it doesn’t dry out too much, but I did not have anything to cover my tray with so I just baked it uncovered at a super low temp for a while, and also had cooked noodles to start, so it didn’t have to bake a long time and it worked out just fine!

Ingredients:
- 1 container lasagna noodles ( I used 12 dried noodles)
- 1.5 c shredded mozzarella
- 1/4c shredded parmesan
- 1.5c cottage cheese
- Sauce:
- 2 cans lentils
- 1 large can crushed tomatoes
- 5 cloves garlic, minced
- 1 onion, diced
- 1 tsp sugar
- Salt to taste
- Optional: parmesan rind

Directions:
- Heat saucepan over medium heat. Add a drizzle of oil. Add in onion and garlic and let cook a few minutes, until fragrant.
- Add tomatoes, sugar, salt, lentils and parmesan rind. Simmer while you prepare everything/as long as possible for ultimate flavour.
- Prepare noodles according to package directions. Boil if necessary, or if using fresh noodles and you cover your baking sheet, you have nothing to do for this step!
- Preheat oven to 300.
- To a 9×13 baking dish, spread thin layer of sauce over bottom. Then repeat noodles, cottage cheese, sauce and mozzarella until you run out of ingredients (should be about 3 layers of this). The top with parm!
- Bake for 30 minutes (ideally covered) at 300, then raise temperature to 400, remove covering and bake until top is browned (10-15 minutes).

Tips:
- Make it freezer friendly: I would recommend freezing after baking and slicing it into pieces. Put the pieces into a container and then once you’re ready to eat you can easily take the pieces out to heat them up in the microwave!
