Chocolate Cupcakes

Vegan chocolate cupcakes make the best cupcakes!

I don’t know what it is about vegan chocolate cakes, but they are just perfect and moist and fluffy.

This recipe makes 12 cupcakes.

Ingredients:

  • 115g (~1c) flour
  • 35g (~1/4c) cocoa
  • 1 tsp baking soda
  • 1 tsp salt
  • 1c granulated sugar
  • 1/4 c oil
  • 2 tsp white vinegar
  • 2 tsp vanilla
  • 1 c hot water

Directions:

  1. Preheat oven to 375.
  2. Line cupcake tray with cupcake liners.
  3. Heat 1c water in saucepan.
  4. As that is heating up, to a large bowl, add flour, cocoa, baking soda, salt, sugar and whisk to combine.
  5. Turn water off heat once hot.
  6. Add oil, vinegar, vanilla and water to bowl, fold to combine.
  7. Scoop batter into cupcake tray.
  8. Bake 15-20 minutes until domed.
  9. Frost with your frosting of choice (or eat unfrosted, whatever floats your boat) and enjoy 😊
