The fluffiest, smoothest hummus!

The key to getting your hummus super fluffy and smooth is boiling your chickpeas in baking soda water until they are just falling apart. And if you want it even fluffier, processing it with a couple ice cubes will take it one notch further!

This recipe works with dried chickpeas as well, soak 1/2c dried chickpeas in water overnight and the boiling process is going to take a while longer, but it will turn out just as well!

Ingredients:
- 1 16oz. can chickpeas
- 1 tbsp baking soda
- 2 tbsp tahini
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 – 3 cloves garlic
- 0.5 – 1 tsp salt

Directions:
- Add chickpeas and baking soda to small saucepan, add enough water to cover chickpeas, simmer until chickpeas are extremely soft (10-15 minutes). They will likely boil over, so make sure you are watching them.
- Drain chickpeas, lightly rinse and let cool slightly.
- Add chickpeas to food processor and process until smooth.
- Add the rest of the ingredients (tahini, olive oil, garlic, salt, lemon juice) and process until well combined and fluffy.

Tips:
- Maximize fluffiness: Don’t skip boiling the chickpeas and add in 1-2 ice cubes when food processing.
- Fun flavours: Roast your garlic, or add roasted red peppers or boasted beets or sweet potato!
