Crispy, chewy, with just the right amount of spice!

The warm spices are so perfect for fall and winter. They just taste cozy and will make your home smell so delicious. As always, brown butter is not essential to the recipe, but enhances the nuttiness so well, and plays so well off of the spices!

Ingredients:
- 1/2 c brown butter
- 1/3 c molasses
- 1/4 c brown sugar
- 1/2 c granulated sugar + more for coating
- 1 egg
- 2 c flour
- 2 tsp baking soda
- 2-3 tsp ginger (depending on how spicy you want the cookies)
- 1-2 tsp cinnamon
- 1/2 tsp salt

Directions:
- Preheat oven to 375
- In large mixing bowl, mix butter, molasses, brown sugar, white sugar until combined.
- Crack egg in and mix vigorously until light and airy.
- Fold in flour, baking soda, ginger, cinnamon and salt.
- Pour a small amount (a few tbsp) of granulated sugar onto plate.
- Roll into balls (roughly 2 tbsp of dough for small cookies and 4 tbsp for large cookies) and lightly roll ball in granulated sugar.
- Bake for 8-12 minutes, until cookies are fully crackled through.
