Protein Pancakes

Just as good as normal pancakes, I promise!

Most healthy pancake recipes I’ve tried just taste like oats or bananas, or are chalky from protein powder, or the texture is dense and not fluffy. After many iterations of testing, this one is actually as good as normal pancakes I promise, but with added fiber from oats and banana, and of course the protein from the protein powder!

Ingredients:

  • 1 ripe banana
  • 1/3 c quick/instant oats
  • 1 tsp baking powder
  • 1 scoop protein powder
  • sprinkle salt
  • 1/3 c water
  • 1-3 tbsp flour (depending on whether you want thin or thick pancakes)
  • Toppings of choice: chocolate chips, blueberry, apple, cinnamon

Directions:

  1. Blend all ingredients except toppings until smooth
  2. Stir in toppings of choice
  3. Preheat pan over medium heat, adding a couple teaspoons of butter/oil to coat bottom of pan
  4. Pour batter into pan, making your pancakes as big or as small as you want!
  5. Let cook until bubbles form and pancakes are golden brown on bottom and then flip and let cook until bottom is golden brown
  6. Enjoy 😊
